One of my favourite ways to start a day when the weather turns colder is with a bowl of cozy oatmeal. It is so healthy, loaded with fibre, and is incredibly versatile. Oatmeal only takes 20 minutes to make (less if you use the quick oatmeal), and really ‘sticks-to-your-ribs’ as my granny would say. Here are two ways to bring in the fall flavours to your breakfast in a pinch!
APPLE CRISP OATMEAL (serves 4)
Ingredients:
- 3 c. water
- ¼ tsp. salt
- 1 1/3 c. old fashioned oatmeal
- 2 Tbsp. brown sugar
- 1/3 c. raisins
- 2/3 c. grated apple (peeled)
- 1 tsp. cinnamon
Directions:
- Bring the water and salt to a boil in a medium saucepan. Add the oatmeal and simmer for 5 minutes, stirring occasionally.
- Add the brown sugar, raisins, grated apple and cinnamon and cook on low until the oatmeal is cooked, approximately 15 minutes.
- Top each bowl with a dash of cinnamon and some milk or cream if desired.
PUMPKIN PIE OATMEAL (serves 4)
Ingredients:
- 3 c. water
- ¼ tsp. salt
- 1 1/3 c. old fashioned oatmeal
- 2 Tbsp. brown sugar
- ½ c. pumpkin puree
- ½ tsp. pumpkin pie spice (I used Epicure)
- ¼ c. pumpkin seeds
Directions:
- Bring the water and salt to a boil in a medium saucepan. Add the oatmeal and simmer for 5 minutes, stirring occasionally.
- Add the brown sugar, pumpkin puree and the pumpkin spice and cook on low until the oatmeal is cooked, approximately 15 minutes.
- Top each bowl with the pumpkin seeds and some milk or cream if desired.
